Thai Prawn Cakes from Tefal


Preparation: 20 mins
Cook: 10 mins
Serves 4

50 gm red curry paste
300 gm fresh prawns, shelled and chopped into a pulp
3 kaffir lime leaves, shredded finely
2 long beans, sliced finely
1 small egg, beaten
2 tbsps flour
1 1/2 tbsps fish sauce
Pinch of sugar
3 tbsps oil
Chopped coriander to garnish

Method:
1. Combine curry paste, prawns, lime leaves, long beans, egg, flour, fish sauce and sugar in a bowl. Mix thoroughly to form a soft batter
2. Heat oil in Tefal Privilege Frypan over a medium fire. Using clean hands, shape 1 tbsp batter into a flat patty and pan-fry in batches for 3 to 4 mins per patty
3. Remove and drain on paper towels. Serve hot, topped with coriander
